Peanut butter cookies: Good for the soul
How to make Peanut Butter Cookies the Loni way.
Ingredients
8 tbsp.(1 stick) unsalted butter
3/4 Cup Smooth Peanut Butter (crunchy works too)
1/2 Cup Granulated sugar
1/2 Cup Brown Sugar
1 Egg
1 tsp. Vanilla
1 1/4 Cup Flour
1 tsp. Baking soda
Instructions-
1. Be lazy and melt butter in the microwave for a minute, it’s faster then creaming it by hand.
2. Mix together both sugars, the vanilla and egg. Stir in the melted butter.
3. Stir in the peanut butter and baking soda.
4.Add in the flour 1/2 cup at a time to prevent lumps. Continue to stir until it forms a doughy state. NOTE the dough will be some what soft and sticky.
5. Preheat the oven at 350 degrees F.
6.You can either roll the dough flat and use a measuring cup to make perfect circles, or roll little balls and flatten them. To get the authentic feel, run a fork across the dough horizontally and vertically to get the cross hatched lines.
7. Place on a baking sheet or a grease pan and place in oven to bake for approximately 15 minutes. Remember to leave space between cookies to expand. Do not bake cookies all the way through, take them out as soon as they turn golden brown. If you leave them in, they will become too hard to bite.
8. When cookies are done, let them cool down before removing. Attempts to remove them immediately may cause them to break and lose shape.
9. Eat them fast before people steal them from you. They’re just that yummy.
